I agree with what Essay Snark wrote - it really comes down to impact versus breadth. However, keep in mind, if this is your only EC activity, then yes, you really should look to bolster that component of your application. Make sure the additional activity makes sense though. If you are passionate about your community and church, then look to branch out in that vein. Or, if there is something specific you want to do after your MBA and there's an activity you can get involved in now that's associated with that, then that would work too.
You should value impact but if you have the time before you apply, then look to branch out and strengthen your EC profile.
